New York competitive eater wanted for story

I am a freelance journalist, and I would like to speak with a [New York City competitive eating trainer and/or trainee for a story on competitive eating.
I’d like to touch on the following topics:
Many contestants look “normal,” in other words, not obese. What is it about their biological makeup or training that allows or pushes them to eat so much?
How does one train for a contest?
What are some of the health concerns for the participants of these contests?
How do these risks change based on the purpose of the contest–whether it’s who-can-eat-the-most or -the-spiciest, whether it’s hot dogs or oysters?
